Varietal composition: 100% Xinomavro (yield < from 600 kgr/str.)
Area-Vineyard: Askos - Agios Konstantinos 15 acres of privately owned vineyard. o altitude 500-550 m. o soil: clay loam on a limestone substrate. Harvest dates: Second half of September
Vinification: Fermentative extraction. Alcoholic fermentation: 15 - 20 days at 25–30oC.
Aging: 12 months in French and American oak barrels (new &, 2nd use) and 12 months in the bottle
Tasting profile: Bouquet with the play of ripe red fruit (plum, sour cherry) and vegetation: tomato and green leaves. Good structure, with measured density, silky tannins and a very long finish. In other words, it has the diverse identity for which Xinomavro is loved.
Harmonies: It goes perfectly with Mediterranean cuisine and more specifically with grilled and cooked red meats with fresh tomato sauces, traditional pies, spicy yellow cheeses. Enjoy: at 16-18oC.
Aging potential: 5 – 8 years
