Varietal Composition: Xinomavro (50%), Grenache (30%) & Limnio (20%)
Vinification: Pre-fermentation extraction at 10-12 ° C for 48 hours Alcoholic fermentation in stainless steel tanks at (+/–) 22 ° C for (+/–) 12 days.
During the fermentation, the must is recycled to come in contact with the marcs and to extract the tannins and anthocyanins of the grapes. Maturation: 10 months in barrels of 300 liters of French oak (40% 1st and 60% 2nd and 3rd use). Aging: 6 months in the bottle before being placed on the market
Character: Deep ruby color. On the nose aromas of red fruit with notes of spices. The mouth is rich with strong tannins and a long aftertaste.
Serving Suggestions: Served at 18-20 ° C, accompanied by meats with rich red sauces, game and aged ripe cheeses.
