Characteristics : Light red color with good texture. The nose is intense and persistent with a very floral and fruity taste. Soft tannins leave a freshness on your palate.
Harvesting is done by hand and usually starts around September 15th and ends around October 15th. Fermentation takes place in steel containers at 28-30 degrees and lasts about 15 days. Then 30% of the wine is aged in barrels while the remaining 70% in cement. After the wine is bottled, it matures for at least 2 months in the bottle.
Harmony – Serving temperature : Served at 18 C, Chianti Colli Fiorentini DOCG is suitable for all dishes. It also goes well with pasta with meat sauces such as Amatriciana or Carbonara and meat such as beef.
