STORY BEHIND THIS WINE
Ripassa is made by passing Valpolicella wine over pressed, wilted Amarone grapes for 7-8 days. This causes a second fermentation to begin, which gives a higher alcohol content and a richer style of wine. Sergio Zenato was the first in the 90s to rediscover this ancient winemaking method, which received DOC status in 2010.
