Varietal composition: 100% Chardonnay
Cultivation and Winemaking: The Chardonnay vines are planted in slate soils, which gives the grapes freshness and finesse. Today, Chardonnay is grown on an area of 8 hectares using organic methods and aiming for low yields that do not exceed 600 kg/hectare. The grapes are picked by hand and carefully sorted before being taken to the winery, where a second selection takes place. Afterwards, the grapes are lightly pressed and go through a pre-fermentation extraction stage at a temperature of 10-12 oC. After a period of 4 months with light stirring of the lees, the result is a wine with cool acidity and a round body.
Characteristics : Chardonnay is a wine with a bright yellow color and green highlights. The nose is dominated by citrus and tropical fruit aromas combined with herbal and mineral notes. In the mouth, juicy fruity aromas are balanced with refreshing acidity and buttery texture, while the finish leaves the mouth with lingering fruit aromas.
Accompanying : An ideal food wine, Chardoannay can be combined with a wide variety of Mediterranean cuisine, from classic laderas to grilled chicken or fish, while it can be enjoyed on its own as an aperitif.
Served: at a temperature of 9-10 °C and is best consumed fresh, although it can be kept in the bottle for another 1-2 years.
