Vineyard: 25-year-old vineyard plot, planted in clay-stone red soil, shale parent rock. The management and development of the ecosystem is based exclusively on the principles of Organic Agriculture (the estate is under the certification process)

Harvest period: September 12-15
Aging: After the end of the alcoholic fermentation of unbroken racks in open oak barrels, the wine is destemmed and decanted by 50% of its volume into 225 liter barrels and 50% into concrete containers. His stay in them can vary from 8-12 months. Each harvest matures by remaining in the bottle for 6 months before being released on the market.
Aging potential: 8 years
Characteristics: Red color with a slightly brick shade. The nose is reminiscent of a Mediterranean countryside full of wild herbs & hints of sour cherry and bitter almond. Medium body, with a creamy texture without lacking acidity
Served with: lasagna, moussaka, veal, braised with eggplant, duck fillet
