Variety : Sauvignon Blanc 60% • Cabernet Sauvignon 40%

Vineyard: 22-year-old plot of land, planted in the red stony soils of shale parent rock. The management and development of the ecosystem is based exclusively on the principles of Organic Agriculture (the estate is under the certification process). Per hectare yield: average 0.9 tn/ hectare. Harvest time: Sauvignon Blanc is ready to harvest August 20-23 and Cabernet sauvignon follows August 29-30

Characteristics: Light to deep salmon color. Nose representative of Sauvignon Blanc, with emerging mango and grapefruit characters. Dryness, vigor, elegance!

Aging: 2-3 months periodic "batonnage" of light winemakers in stainless tanks

Aging potential: 3 years

Served with: tuna and salmon tartare, pasta with lobster, fried lobster, risotto with shrimps, salads with fruit dressing, sushi

Served at 11-12˚C
