Vineyard: Average age of vines 15 years. The origin of the raw material is split 50-50 between shale and limestone subsoil. The management and development of the ecosystem is based exclusively on the principles of Organic Agriculture (the estate is under the certification process)
Characteristics: Light straw color with greenish hues. Explosively fruity on the nose, with distinct characters of lime and orange peels. Refreshing acidity on the palate!
Aging: 2-3 months periodic "batonnage" of light lees in stainless tanks
Aging potential: 3 years
Accompanied by: seafood dishes, shellfish, seafood, large fatty grilled fish, pasta with smoked eel or trout, lamb with egg and lemon, roe, aged cheeses
