Red Dry PDO
Varietal Composition: Xinomavro 100%. Year planted 1919, cup shaped.
Region / Vineyard: PDO Amyntaio Viticultural zone.
Vinification / Aging: Descrushing, absence of press, 4-day pre-fermentation cryo-extraction, alcoholic fermentation using native yeast flora, selected and isolated from the same vineyard, at incrementally graded temperatures, and wine aging for 24 months on its lees with periodic stirring. 24 months in selected, new, fine-grained, French Allie – Jupilles oak barrels, white burn (steam) and 12 months in the bottle. It is not filtered and undergoes absolutely no treatment before bottling.
Tasting characteristics: Brilliant ruby color with intense red highlights. Complex bouquet with characteristic aromas, spices, dried plum and tomato. Full mouth, excellent quality phenolic potential, with balanced acidity and long lasting aftertaste. Wine with great aging potential.
Harmony: Goes well with rich meats grilled or cooked in a rich tomato sauce. Grilled sausages, meat pies and mature fatty cheeses, slightly spicy.
Ideal enjoyment at 16-18° C.
