Wining: Classic white vinification, with separation of the pomace, cryo-extraction, static settling and fermentation of the clear must at a controlled temperature of 16 - 18°C. Alcoholic fermentation takes place in stainless steel tanks and is followed by a 2-3 month maturation in new French oak barrels with periodic stirring of the fine lees.
Taste profile: A northern version of the fine Greek variety.
In appearance, intense - bright yellow color, on the nose, distinctive aromas of citrus and summer fruits. With a hearty body and pleasant texture, it highlights the ‘wise’ use of the barrel, enhanced by the refreshing acidity.
Pairings: Enjoy with Mediterranean dishes based on vegetables, fish, seafood. It also pairs wonderfully with sushi and other Japanese cuisine.
