Winemaking : Harvest very early in the morning and transport to the winery by refrigerator truck. Leave the grapes in the refrigerator for 12 hours, thaw and freeze for 14 hours at a temperature of 0 ℃. Rapid pressure up to 1.4bar. Fermentation at a controlled temperature. Stopping alcoholic fermentation at 9 ℃.
Organoleptic Characteristics : Vivid rose color with violet highlights. Special intoxicating nose of wild forest strawberry pomegranate with floral notes. Rich irritating mouth with intense aftertaste.
Enjoy it : As an aperitif with light chocolate mousse, sweets with white milk chocolate, sweet yogurt with strawberries, green salad with pomegranate and honey dressing, fruits and fruit salads. Recommended cheeses: Roquefort
