Vinification: Pre-fermentation cryo-extraction and then classic white vinification at a controlled temperature
Remaining on the lees for 6 months. Possibility of aging for 3 years.
Organoleptic Characteristics: Malagouzia with intense acidity and lemon aromas.
Suggested Pairings: Served at 10°C and combined with smoked and mature hard cheeses, fatty fish such as salmon, mushroom risotto, smoked aubergine preparations as well as pasta with fatty sauces and seafood.
