Appearance : Deep red color with strong personality and vivid shade AROMA: Emerges a rich bouquet of ripe red fruits, raspberries, sun-dried tomatoes and plums that coexist with the aromas of cinnamon, pepper, black olive and wood
Taste : With rich and full body, good balance, characteristically very soft in the mouth without any bitterness or astringent tannins. It approaches a more modern style of Naoussa that is easier to drink.
Accompanies : Red meat dishes, sauces, pasta with red spicy sauces. Yellow cheeses such as parmesan and smoked cheeses.
Serving temperature : 16-18. C
Cold extraction for 24 hours, bleed rate for rosé, controlled alcoholic fermentation with selected yeast strains at 20-27C, gentle extraction with intensive recycling before the start of fermentation (7-10 days), fermentation, non-pressurized no inclusions French oak barrels (3rd and 4th use) for 12 months, gentle filtration with large cross section of diatomaceous earth, final filtering (polishing) of filter paper
Can be aged for more than 10 years
