Protected Geographical Indication Plagies Paikos (PGI)
Varietal composition: 100% Negoska
Vineyard: Linear organic vineyard in Phyliria (wine region of Goumenissa). Soil: Medium sand-clay
Vinification: Very carefully selected whole Negoskas bunches go through the carbonic extraction process in anaerobic conditions for 10 days. The whole bunches are then carefully pressed and the remaining sugars are converted into alcohol by the usual spontaneous alcoholic fermentation. The wine remains in contact with its lees for 6 months. It has not been clarified or filtered and has a very low level of sulphur, which is added before bottling.
Aging: 6 months with the lees in tank
Organoleptic characteristics: This intense red wine has purple highlights and slight turbidity. It has a very intense nose consisting of aromas of dried strawberry, red fruits, cloves, cinnamon, balsamic with some fresh green notes. In the mouth it has balanced acidity and subtle tannins in the finish.
