CHARACTERISTICS: GRAVIERA (GRUYERE) IS ONE OF THE MOST FAMOUS CHEESES OF CRETE, IT IS A RIPENING CHEESE AND ONE OF THE THREE CRETAN CHEESES OF PROTECTED DESIGNATION OF ORIGIN (PDO). IT IS PRODUCED FROM FRESH PASTEURIZED GOAT'S AND SHEEP'S MILK (UP TO 10% GOAT'S MILK) WITH THE TRADITIONAL WAY OF PRODUCTION. THE MILK COMES FROM SHEEP THAT GRAZE FREELY IN MOUNTAIN PASTURES. MATURATION TIME IS IMPORTANT FOR HIGHLIGHTING ITS TASTE AND AROMAS, IT IS ALSO BETTER TO CONSUME IT AT ROOM TEMPERATURE. IT MATURES FOR AT LEAST 24 MONTHS IN SUITABLE TEMPERATURE AND HUMIDITY CONDITIONS.
FLAVOR: RICH SPICY BUTTERY FLAVOR THAT HIGHLIGHTS THE AROMAS IF YOU LEAVE IT OUT OF THE FRIDGE FOR A WHILE BEFORE SERVING.
PACKAGING: HEAD APPROXIMATELY 1000G IN AIRTIGHT PACKAGING. CAN BE STORED FOR A VERY LONG TIME IN THE REFRIGERATOR AND KEPT DURING TRANSPORT AND OUT OF THE REFRIGERATOR FOR SEVERAL HOURS.
ACCOMPANIES: ALONG WITH BREAD, OR RUSKS, OR PLAIN ACCOMPANIES AGED RED WINES OR FATTY WHITE WINES. IT GOES PERFECTLY WITH HOT JAM (SPICY JAM) IN WINE TASTINGS. EXCELLENT WITH SPAGHETTI INSTEAD OF ITALIAN AGED PARMESAN.
