Winemaking : Winemaking of grapes of the Moschofilero variety from 47-year-old vines grown on clayey soils at the Boutari Estate on the Mantineia Plateau. Harvesting is done manually and begins with the first light of day. After the harvest, the grapes are hand-sorted in the winery to ensure the excellent hygienic condition of the grapes, while then the whole amount of pre-fermentation extraction is applied for 6 hours, a process that aims to transfer the aromatic richness of the rail bark to the must. This is followed by static extraction and inoculation with selected yeast strains. The alcoholic fermentation is carried out at controlled temperatures of 12 - 18 0C while at its end, the wine matures for a short time in stainless steel tanks with simultaneous stirring of the fine mud to highlight its character. It is bottled after mild filtration so that its organoleptic characteristics are preserved to the fullest.
