Dry version of the Liatiko variety. One of the noblest indigenous varieties of the Cretan vineyard.
In Dafnes, Heraklion, Crete, at an altitude of 350 meters. The native variety "Liatiko" is located mainly in Dafnes and offers dry wines, but also naturally sweet sun-dried wines.
Winemaking : Classic red winemaking. The alcoholic fermentation begins for 3 days at 20 ° C and then continues at 25 ° C, in stainless steel tanks. Mature for 12 months in barrels of French oak 1.5t and 3t. The wine ages very nicely for about eight years.
It is a pleasant surprise as you will find spices, tomato paste, maybe olive, raw leather and hints of black fruit on the nose, while when the time passes over it, aromas of spices, dried fruits and skin will unfold. Attractive color, not too deep, ruby with orange highlights - characteristic of the variety. In the mouth there is the continuation of the aromas of the nose, moderate body, good acidity, soft and delicious tannins that compose a fine wine.
Served : at a temperature of 17. C. Surely we could describe this wine as a "wildcard".
