An excellent wine, Vidiano. While it has been around for a long time, it has been forgotten for years, until the painstaking and persistent efforts of some of Crete's inspired wine producers managed to bring it back to the forefront and give high-quality wines. The white "Dafnios" is produced exclusively by Vidiano, without any use of the barrel. In Dafnes, Heraklion, Crete, at an altitude of 350 meters.
Winemaking : Classic white winemaking. Fermentation takes place in stainless steel tanks at a temperature of 18 ° C. No barrel is used, neither for fermentation nor for maturation.
It can be up to 5 years old. Its evolution over time is very interesting, as fresh fruity aromas evolve into different but also intense and complex aromas, such as roasted nuts, earthy, honey and caramel.
Soft golden color. Moderately intense aromas of yellow fruit and citrus, combine beautifully and complimentary with slightly more intense aromas of chamomile, jasmine and spices - mainly peppers. The full and rich taste is dominated by the delicious characteristics of apricot and flowers. Very pleasant, balanced acidity and good aftertaste.
Served : at a temperature of 9-10 ° C and is an excellent accompaniment to the tongue (fish) "meuniere", Christmas fish, grilled sticks and with a fish, the mill, which now conquers the laurels that have always been worth it.
Accompanies : excellent and with pork with celery, with the predominantly Cretan pork with leeks, very safe and with lamb fricassee with lettuce. The chickpea soup with lemon sauce, the Sifniki slow-cooked in the tsikali baked chickpeas and the boiled chickpea salad with spices are also great for it.
