Varieties: Mavrotragano 100%

Vineyard: Mavrotragano is the main red variety of the island which was extinct a few years ago. The vineyards are scattered all over the island. It is a versatile variety with great aging potential.

Vinification: Classic red vinification with 4-7 days of pre-fermentation extraction. Fermentation in stainless steel tanks with long extraction and daily recycling. Aging in French and American oak barrels 1st-3rd use for 12 months.

Characteristics: Concentrated aromas of black fruit, spices and pepper. Full body with high acidity and soft tannins.

Combinations: Red meats, game, aged smoked cheeses

Aging Potential: 10+ years
