Varieties: Assyrtiko 100%
Vineyard: Old vines aged 50+ years, mainly from the area of Megalochori.
Vinification: Fermentation in stainless steel tanks at controlled temperature. Use of wild yeasts in order to express mainly the varietal characteristics. Long fermentation up to 2 months and maturation with wine lees for 6-8 months.
Characteristics: Aromas of stone fruits and dough frame the typical salinity and minerality of Assyrtiko. Full body, creamy texture with high acidity and long aftertaste.
Combinations: Seafood, large fish and white meats with fatty sauces
Aging Potential: 6+ years
