Category: Santorini Protected Designation of Origin (PDO)
Varieties: Assyrtiko 100%
Vineyard: Old vines over 50 years old in Megalochori. Use of overripe grapes with harvest in late August.
Vinification: Fermentation in stainless steel tanks and transfer to barrels to complete the fermentation. Then it matures on the lees for 6-8 months. Using French oak barrels with a light burn.
Characteristics: Oxidative maturation gives Nykteri its special characteristics. Complex nose with aromas of nuts, ripe fruit vanilla and honey accompany the minerality of Assyrtikos. Full body with high alcohol and long aftertaste.
Pairings: Fatty fish and white meats
