Wining: In mid-August, after sorting in the vineyard, the grape mass is vinified using dry ice in the pneumatic press. After the static de-mudging, fermentation is carried out at low temperature with selected yeast strains. With the four-month sur lies maturation, the winemaking cycle is completed.
Characteristics: Sauvignon Blanc is a white wine that combines perfectly with Assyrtiko in a classic blend, slightly herbal, fresh, aromatic, derived from grapes of the region with a simultaneous expression of the Mediterranean character of both varieties. Cultivation area, wider than the winery in one of the most aromatic clones of SB.
Straw yellow in color and shades depending on the year. On the nose, tropical notes, combined with citrus and stone fruits, characterize it as typical. In the mouth it is delicious with intense salinity.
Production: The average yield is low at 900 kg/ha
