Variety composition: Assyrtiko
Vineyards: Pyrgos and Emporios, organically grown.
Vinification: The destemmed grapes underwent a 12-hour cryo-extraction. Fermentation with native yeasts at 17-18°C lasting 45 days. Aging: With the noble lees for 6 months in stainless tanks. Bottling: Unfiltered.
Organoleptic characteristics: Moderate yellow-green color. Aromas of fresh citrus fruits, notes of clematis,
small white flowers and chamomile. Fine aroma of mastic. Elegant and subtle feel on the palate, Long, mineral aftertaste with lingering acidity and a hint of saltiness.
Serving suggestion: Shellfish, seafood pasta, fish, fatty fish (eg tuna, salmon) and fatty cheeses.
Recommended serving temperature at 12-14°C.
Able to age for more than 10 years.
