Variety : Assyrtiko 90% and 10% Athiri and Aidani

Winemaking : Receiving only the appetizer from the press and after thawing, the juice is taken to the barrels to start fermentation. Large volumes, non-combustible or moderate combustion barrels and a small percentage of 1 use compose the profile of the wood used. Frequent stirring during fermentation and aging in the presence of whole wineries. Total maturation for 16 months. The bottles are available on the market after 1.5 years from the harvest in order to highlight the complex and special character that Assyrtiko acquires during its aging.
Description : Intense aromatic combining on the nose nuts with ripe yellow fruits, honey, quince but also advanced minerality. Rich and greasy in the mouth with a strong character, our Night is a pure "dynamite" wine with an exuberant body that balances due to the electrical acidity and the long salty aftertaste.
Possibility of aging : 8-10 years.
