PDO Santorini Assyrtiko
Vineyards: Specially selected vineyards from old vines of Assyrtiko. Separate points in the areas of Pyrgos, Megalochori, Exo Gonia, Akrotiri and Fira
Winemaking: Classic white with a percentage of pre-fermentative extraction. Use only the forerunner and ferment at a controlled temperature with neutral and native doughs. About 10% of the final blend is fermented in a barrel. Minimalist approach to all stages of winemaking and maturation with wine lees for at least 8 months.
Description: Typical and strict expression of Santorini. Typical minerality in the nose, fruit hints (peach, pear). Creamy texture, balancing the nerve and the classic high acidity of Assyrtiko. High concentration, elegant complexity and long salty aftertaste.
Aging potential: 7-10 years
Accompanies: in a carafe for proper breathing at 10-12 oC. It goes perfectly with first-class grilled fish, shellfish, Asian dishes and even lamb or white meat with aromatic herbs.
