Varietal composition: Xinomavro 98%, Limniona 2%
Vinification: Whole bunches pressed in a membrane press. Controlled fermentation temperature at 18 degrees Celsius. Low use of sulphur, no chemical additives. 2nd fermentation in bottle. Sur latte 9-18 months.
Characteristics: Fruity, mineral with yeast on the nose, aromas of strawberry, raspberry. Tiny bubbles that last. The wine's impressive structure is based on acidity and tannins with a long citrus aftertaste.
