Varietal Composition: Pinot Noir
Vinification: The Rossiu di Munte range is the "wines of the mountain", from the most mountainous vineyards of the Estate. Due to a very cold climate, it made sense to try a quintessentially cold-loving variety, Pinot Noir, with very good results. Eruption – pressing and extraction and after the end of fermentation, which lasted a total of 20 days. During the fermentation, the cap is soaked 2 times a day. The temperature of the fermentation is between 25° and 30° C and immediately after the end of the extraction the wine matures in a French oak barrel of 300 liters (Never Chauffe Legere) where it remains with the lees for two months. Then the maturation in the barrel continues for another 12 months.
Characteristics: Ruby wine with violet highlights. Both aromatically and in taste, it expresses the fruity character of the variety in combination with other aromatic notes. It stands out for its very good structure and acidity.
Accompanies: He looks for the most special meats, such as game, wild boar, but also snails.
