Varietal Composition: Vlachico
Vinification: The Rossiu di Munte range is the "wines of the mountain", from the most mountainous vineyards of the Estate. This wine gives the local Vlachiko variety the emphasis it deserves. Eruption – pressing and extraction until the end of fermentation, which lasted 15 days. During the fermentation, the cap is soaked 2 times a day. The temperature of the fermentation is between 20° and 25° C and immediately after its end the wine goes to mature in a French oak barrel of 300 liters (Nevers Chauffe Moyen) where it remains with the lees for two months. Then the maturation in the barrel continues for another 6 months.
Characteristics: Wine with an impressive aromatic bouquet, dominated by notes of freshly ground pepper. It has good acidity and round soft tannins that fade calmly on the palate. Light and harmonious, it stands out for its peppery aftertaste
Accompanies: Accompanies airy flavors that love red wine. Try it with rich fish, dishes containing charcuterie and with peppery cheeses.
