Varietal Composition: Chardonnay, Assyrtiko
Vineyard: Organic wine, which comes from a selected vineyard at an altitude of 250m above sea level in "Metochi Chromitsa", in the unique ecosystem of Mount Athos. The viticulture on Mount Athos is suitable for organic, since its isolated ecosystem has an ideal microclimate, absence of diseases and isolation from the influence of other crops.
Harvest: Harvesting takes place in small crates, usually on the 3rd ten days of August for Chardonnay, and for Assyrtiko at the end of August.
Climate: Ideal climate conditions with increased sunshine, little rainfall and sea breeze.
Vinification: Pre-fermentation extraction at 8-10 ° C for Assyrtiko and Chardonnay for the full expression of the special aromatic potential of each. Alcoholic fermentation at a controlled temperature of 17-20 ° C to maintain and enhance the varietal aromas. This is followed by maturation of the wine in the tank by stirring the fine wine sludge for 2-3 months before bottling.
Features: Rich palette of aromas of notes of citrus, apricot, white flowers and subtle notes of pear, offering aromatic complexity that unfolds in the glass, revealing aromas of peach, mandarin and chamomile. The metallic acidity of Assyrtiko and the characteristic oiliness of Chardonnay give a rich balanced body with an excellent alternation of taste impressions, giving it vitality and freshness.
Serving suggestions: Ideal tasty combinations of fatty fish with rich white sauces, white meats as well as cool summer salads. Ideal temperature 10-12 ° C.
