Winemaking: The three dimensions of the Kydonitsa variety. Vineyard, Winemaking and Time. Harvested from the Platori vineyard, vinified with mild extraction, in neutral stainless steel and patiently matured in the bottle. Pre-fermentation extraction of 10 hours, fermentation at a controlled temperature of about 18 degrees. Aging on the fine lees with battonage for 9 months and aging in the bottle for almost three years.
Features: Bright yellow color. Aromas of quince, citrus peel, dried herbs, notes of yeast. Intense flavor, acidity, and mild tannic background. Apricot and phenolic tartness, structure and rich texture in the mouth. Aftertaste with duration.
Suitable serving temperature: 8 - 10°C. Alcohol content: 13% Vol.
