Variety Composition : Sauvignpon Blanc 100%

One of the oldest vineyards of Sauvignon Blanc in Greece was planted 30 years ago, in the vineyard of Drummo, in Amyntaio. The climate of the area is characterized by cold winters and hot summers, but it becomes milder thanks to the presence of four lakes, favoring the cultivation of white varieties. In this particular vineyard, the soil is sandy and contributes to the production of wines with excellent finesse and rich aroma. Winemaking : Blanc winemaking begins with pre-fermentation at a temperature of 10 οC for 12 hours. The goal is to extract as many precursor aromatic compounds as possible from the bark of the rail in the must, which will then be metabolized by the dough into aromatic compounds. This is followed by the static thawing of the must and then the fermentation, which takes place at a low temperature, 16-18 ° C, in stainless steel tanks. During the last part of the vinification, batonnage is applied for 3 to 5 months in light wine lees with the help of enzymes, a process that gives the wine a rich body and a sweet feeling in the aftertaste.


Delicious Combinations : It goes well with salads, fish and vegetable dishes but is also enjoyed as a cool aperitif.
