Vinification
Desteaming. Classical red wine vinification takes place at 26-28 ° C
in an closed tank, along with periodic recycling of the must for the best
possible extraction and diffusion of the phenolic components until
shortly before the alcoholic fermentation is complete. The wine
remains for a long time with the lees. Maturation in French oak barrels
for 12 months. Bottling without filtration.

Tasting notes: Ruby red Color. Aromas of ripe and dried fruits,
herbal cures, spices such as black pepper, cinnamon, dried
carnation and distinctive aromas of wood and vanilla. Medium-volume
body, round with surprisingly soft tannins but with acidity that provides
complexity and vivicity in the wine.
Flavor pleasant, fruity complex and strong.
Serving Combinations: red spicy meats with red sauce, veal, game,
grilled lamp and goat and aged cheese. Served at 14-17 C.
