Winemaking / Maturation : Experimental wine winemaking without additional oenological ingredients and sulfite variety of rhodite. Rhodite grapes come from an organic vineyard, dehydrated and coated with juice-bark for 12 days in an open container (classical red vinification method) with periodic peeling of the bark (pigeage). The grape press was lightly pressed with the traditional swirl and the wine continued to ferment in a stainless steel tank. The wine remained in contact with its wine lees for 4 months and was bottled without filtration.

Organoleptic characteristics : Amber color due to contact with the skins for 12 days, especially floral with notes of nuts and wild herbs, aromas of brewer's yeast, baked bread. The mouth is full, slightly tanned, reminiscent of fruit juices such as grapefruit, while the trapped carbon dioxide from the slow fermentation for many months balances the alcohol and gives power and energy. The aftertaste is special with duration and aromatic intensity.
