Vineyard : Roditis (Skyllountia Olympias, Graika Olympias), Assyrtiko (Gryllos Olympias), Moschato Lefko (Riolos Achaia)

Winemaking / Maturation : Pre-fermentation extraction for 3 h and mild pressure of the grapes in a spiritual press. This is followed by controlled alcoholic fermentation in a stainless steel tank, with selected yeasts at 16-17C. Stay the new wine on the fine wine lees for several days.
