Varietal composition: 65% Corvina, 25% Rondinella, 5% Corvinone, 5% Negrara
Vinification: Amarone della Valpolicella Classico is the wine that comes from the classic grapes of Valpolicella, i.e. Corvina, Rondinella, but which have been raisined in the shade for a few weeks. The grapes are carefully selected in mid-September and dried for about 3 months where the bunches lose about 25 - 30% of the weight. After pressing in mid-January, alcoholic fermentation begins in steel tanks for approximately 25 - 30 days at a controlled temperature. Malolactic fermentation in French oak barrels.
Tasting characteristics: Intense red color, with fresh fruit aromas such as blueberries and cherries. In the mouth, notes of chocolate and freshly roasted coffee appear, as well as sweet vanilla from its long maturation in the barrel. A warm and well-balanced wine, with soft tannins and a long aftertaste.
Harmony - Serving temperature : Served at 18 C, Pleasant to drink on its own, but goes best with richer meat stews.
