Vinification : vinification in stainless steel tanks, with extraction for 10 days and alcoholic fermentation at 20o Celsius. This is followed by maturation in French oak Nevers barrels of 300 liters
Total acidity : 5.2
Tasting : deep ruby tint. Aroma of dried red fruits, leaves of blonde tobacco, dry grass, pepper and sour cherries. Juicy, with sharp tannins and good acidity. Nice expression of the fruit. Good acidity
Accompanies : spaghetti with minced meat, tagliatelle with guinea fowl ragout, beef or rabbit / hare stew, moussaka, hunting, aubergines shoes with minced meat
