Variety: 100% Assyrtiko
Grape origin: From one and only vineyard of age-old vines of Assyrtiko located in one of the best terroir of Santorini, Pyrgos.
Vinification: Spontaneous fermentation with natural yeasts in the presence of barks just like in red vinification (skin contact method). 14 days total extraction and then the wine remains with the whole wine lees for 10 months. Natural vinification without any addition or intervention during fermentation and maturation except for minimal sulfite only during bottling (total SO2 40mg / lt).
Description: Nose intense, distinct highlighting a different side of Santorini. Herbal hints in the foreground such as chamomile, mint and black tea in the presence of spices such as cardamom and coriander. Mineral notes and fruity hints of pear and bergamot unequivocally indicate its origin. Mouth structured, exuberant with the presence of tannins that are balanced by the oiliness and volume of the wine. Long aftertaste, salty and spicy feeling at the finish.
Possibility of aging: We do not know exactly because of the nature of the wine. However, based on what we are experiencing, we believe that under ideal storage conditions the wine can evolve for at least years.
Serving and food combination: It is recommended to pour into a carafe to breathe and highlight its complex character for at least an hour. It is drunk at 13-15 ° C in a large Riesling type glass and highlights a wide range of dishes. More specifically, due to its "orange" nature and the existence of soft tannins, it can go well with both fish and meat.
Some of the best combinations we have enjoyed so far: intense and mature gruyeres, first-class fish such as roach and ribs, baked lamb or ribs. Without a doubt it is also an excellent combination with pork but also with various ethnic dishes such as chicken with curry, but also with the spicy Moroccan cuisine.
