Note: Despite the difficulties caused by the weather during the summer months, with alternating heat and rain, the Grenache Rouge performed exceptionally well, both in quality - with micro-fruits, rich in phenol fruits - and in quantity. Our choices, such as that of green manure, helped this good result.
Winemaking: Sorting grapes in a vibrating bank. Cool the grapes to 7oC. Pre-fermentation extraction for 6 hours at 10oC. The grape mass is led to the press where we take only the free-flowing must without exerting additional pressure. Winemaking in stainless steel tanks at 15oC.
In this crop, 15% of the total amount completed the fermentation with native yeasts following the "pied de cuve" technique. A small amount of grapes was harvested and immediately pressed into tanks in our vineyard, utilizing the population of yeasts endemic there.
The harvest of 2021 embraces our first efforts with indigenous doughs, while at the same time, it launches the official certification of organic farming in all our wines.
Description: Glowing. soft salmon color. On the nose, elegant fruity aromas with dominant notes of wild strawberry, red apple and pomegranate. Juicy mouth with balanced acidity that leads to a rich, soft finish.
