Varietal Composition: Moschofilero 100%.
Characteristics: Gray shades with golden highlights, indicative of the contact with the acacia barrel. Typical aromas of rose with notes of bergamot marry beautifully, with a touch of cement and acacia giving purity, complexity and a creamy mouthfeel.
Vinification / Ageing: 11.4 hectare non-irrigated vineyard with a yield of 600-800kg/hectare, planted in 1972 and cultivated with organic practices. After a cryo-extraction of 8-10 hours at 7-8°C, only the free-flowing juice is collected and the alcoholic fermentation begins with native yeasts in a stainless tank. Then and while the fermentation is about halfway through, some of the juice is separated and sent to complete the process in small concrete oval tanks and acacia barrels. For as long as it takes for the wine to mature, we make sure it is in constant contact with its fine lees, which will give it oiliness and a rich texture, while at the same time fortifying it for its long journey through time.

Accompanied by: Grilled large fatty fish, lemon oven goat, seafood carpaccio and Asian cuisine.
Serving Temperature: Served at a temperature of 9-11°C.
