Variety : 50% Xinomavro – 30% Limniona - 20% Mavroudi
Vinification: The grapes are carefully sorted and pressed with whole bunches, in a vertical press. Fermentation takes place in INOX tanks, open top barrels and concrete tanks. After 9 months of maturation on the fine lees, the grapes are ready for blending and bottling. Aging takes place in old barrels, concrete tanks and stainless steel tanks. No new oak barrel is used to preserve the fruity character of the varieties.
Taste Test: This lovely summer red comes from selected vineyards with varied terroirs and vines aged 15 to 50 years. The nose is strongly fruit based, with aromas of cherry, fresh berries and tomato. The palate is well balanced, smooth and fruity, while the Xinomavro gives freshness and intensity and gives good liveliness to the finish.
Food pairings: Served perfectly with grilled meats, cured meats and cheeses. Its unique structure also makes it capable of supporting spicy sauces.
