Variety : 50% Xinomavro – 30% Limniona - 20% Mavroudi
Vinification: The grapes are cooled to 5°C and careful sorting follows, while their direct pressing is then done. Fermentation takes place in stainless steel and concrete tanks, independently for each vineyard plot. That is, each variety from a different vine is kept in a different tank, so as to bring out its own aromas. After 3-4 months of aging on the fine lees, the wine has developed its own character and is ready for bottling.
Tasting: A complex and refreshing Rosé is the result of the 3 most interesting Greek red varieties, from vines aged 15-45 years. Light salmon color. Elegant notes of mandarin, orange, strawberries and white cherries, while the presence of tomato, one of the unique aromas of the Xinomavro variety, dominate the nose. Full body with depth, but also crisp acidity, are what make it special. It is complemented by strawberry and raspberry aromas with a long, refreshing finish. A great rosé to enjoy on its own or with various types of cuisine.
Flavor combinations: Flavor combinations: Combine it with pasta, pizza, fish, salads, fruits, cheeses. An excellent wine for Mediterranean and Greek dishes, which is also enjoyed as an aperitif.
