Variety: 50% Malagouzia – 30% Assyrtiko - 20% Vidiano

Vinification: The grapes are carefully sorted and pressed with whole bunches in a vertical press or wet with a limited cold maceration. Fermentation takes place in stainless steel tanks and amphorae, independently for each vineyard plot. After 3-4 months of aging on the fine lees, the wine has already acquired its character and is ready for bottling.

Tasting: A wonderful wine with great complexity, from vineyards aged 12-45 years. Attractive tropical fruit on the nose, complemented by minerality, fruit and floral notes with a touch of white pepper. On the palate, it has a rich feel with restrained acidity and a lingering fruit finish.

Food pairings: Goes great with seafood and salads, while also supporting shusi and Asian cuisine.
