Variety : Xinomavro (mild intervention)
Vinification: The grapes come from selected vineyards of Naoussa, Amyntaio & Rapsani, dry and aged 45-80 years. Winemaking is a reproduction of the techniques of the previous century, combined with modern know-how. Bursting is done by hand, leaving a percentage with a whole bunch for complexity. Vinification takes place in clay amphorae and concrete tank, while slow fermentation is accompanied by controlled extraction. The wine matures for an additional 6 months in amphorae and old large barrels, thus gaining depth while maintaining its elegance. It is bottled without anything being added to it at any stage, unfiltered to keep its natural character and elegance to the maximum.
Unfiltered, mild intervention
Taste Test: Its refined nose wins from the first moment with notes of black cherry, pomegranate and gooseberry harmoniously complemented by floral aromas and some herbal notes. The complexity of the nose continues in the juicy mouth, with its elegant density, where its velvety tannins and long, fruity aftertaste make a positive impression.
Flavor combinations: Excellent combination with cooked and grilled dishes, ribs, a variety of cheeses and cured meats, as well as Asian cuisine.
