Variety : 100% Assyrtiko
Origin of grapes : Pyrite comes from three exceptional vineyards with old vines of Assyrtiko that can be over 120 years old. Both are located in Pyrgos and one in Megalochori, two areas that are famous for the excellent quality of grapes.
Winemaking : Classic white winemaking at controlled temperatures with exclusively neutral doughs to maintain the varietal character. Winemaking with the least possible interventions to express the character of the vineyards. Upon completion of the fermentation, the wines matured on their entire wine lees with frequent stirring for a total of ten months.
Description: Nose full of minerality and the characteristic, for the Assyrtika of Santorini, tsakmakopetra. Notes of ripe stone fruit and citrus tart. Rich mouth, exuberant with finesse and balanced acidity. Long aftertaste with saltiness and minerality.
Possibility of aging: For at least a decade.

Serving and food combination : It is recommended to pour into a carafe to breathe and open the wine in order to highlight its complex character.
It is drunk at 11-13 ° C and is a perfect combination with oily fish, or salmon carpaccio. Alternatively try it with lamb fricassee while also creating a great combination with white meat such as stuffed turkey and pasta or shellfish risotto.
