Origin of grapes : Old mainly vineyards from various areas of the island. The largest percentage comes from vineyards in the areas of Pyrgos, Exo Gonia and Megalochori while part of it from Akrotiri, Emporio and Fira.
Percentage of pre-fermentation extraction depending on the year. Separate fermentation tanks for each variety at controlled temperatures. The final blend is decided according to the profile of each year and matures with fine and whole wine lees for at least 5 months.
Description : The nose is dominated by fruity (pear, peach) and mineral (wet stone) aromas. Floral notes such as jasmine and botanical come from the percentage of Athiri Aidani, offering complexity. Full body with the simultaneous presence of freshness that gives the wine an elegantly balanced character.
Possibility of aging : 5-7 years.
