Varietal composition: Sauvignon Blanc, Roditis
Vinification: Vinification separately for each variety. After the careful sorting of the grapes both in the vineyard and in the winery, the grapes are lightly pressed to receive only the first juice. Subsequently, desilting and inoculation with a different strain of saccharomyces is carried out for each variety. The temperature of the fermentation ranges from 13° – 16° C and ends after a period of approximately 25 days. The exact ratio of the varieties is determined organoleptically.
