Varietal composition: Sauvignon Blanc, Assyrtiko
Characteristics: Harvest during the night. Pre-fermentation extraction at low temperature, pressure at low values, and fermentation in controlled conditions, help to extract this potential. Then, the wine remains for two months with its lees, which give it volume in the mouth. Greenish-yellow color, complex aroma of exotic and white-fleshed fruits, dominated by grapefruit and peach. In the mouth, Assyrtiko (50%) gives a distinctive 'mineral' sensation and its characteristic nerve, which gives freshness and a long-lasting aftertaste.
Served at 9-11°C, ideal accompaniment for seafood, pasta with white sauces and salads.
It ages for up to 3-4 years
