Varietal composition: Assyrtiko (2% Sauvignon Blanc)
Winemaking: An Assyrtiko “Off-Site”. This is a label with limited annual production in numbered bottles. It is produced from the Assyrtiko variety which ferments and matures for 6 months in 500lt oak barrels. During maturation, the wine is in contact with its fine lees and is stirred periodically.
Tastes: The wine is characterized by minerality and tertiary aromas of maturation. Its acidity is in complete harmony with its volume and fat content. It is a white wine that has a 5-year aging potential. Fruits (white-fleshed peach, apricot), citrus fruits, vanilla.
Pairs well with: white meat (oily fish, chicken), seafood, Asian cuisine.
Serving temperature: 12°C - 14°C.
